{"id":7726,"date":"2019-01-23T16:50:43","date_gmt":"2019-01-23T16:50:43","guid":{"rendered":"https:\/\/lindseyfishernc.com\/?p=7726"},"modified":"2019-01-23T16:50:43","modified_gmt":"2019-01-23T16:50:43","slug":"another-insta-delicious-meal","status":"publish","type":"post","link":"http:\/\/odez.com\/lindsey\/another-insta-delicious-meal\/","title":{"rendered":"Another Insta Delicious Meal"},"content":{"rendered":"<p>2 lbs organic chicken breasts<br \/>\n4 organic carrots, cut into bite-sized pieces<br \/>\n3 organic celery stalks, cut into bite-sized\u00a0pieces<br \/>\n1 medium onion, chopped<br \/>\n3 cloves of garlic, minced<br \/>\n1 tbsp organic coconut oil<br \/>\n1 28oz can organic crushed tomatoes w\/ basil<br \/>\n1 bag frozen riced cauliflower<br \/>\n3\/4 can organic full fat coconut milk<\/p>\n<p>Spice mixture: 1\/2 tbsp ground ginger, 1-2 tbsp chili powder, 1 tbsp curry powder, 1 tsp\u00a0roasted garlic powder, 2 tsp\u00a0sea salt, fresh ground pepper.\u00a0 Mixed in a bowl and set aside.<\/p>\n<p>Place carrots, celery, garlic, onion and coconut oil in your InstaPot and set to saute.<br \/>\nWhen those are done (about 10-15 minutes) remove the top. Add chicken, canned tomato, cauliflower, coconut milk and spice mixture. Stir to combine and set on manual high pressure for 30 minutes.<\/p>\n<p>Remove the chicken breasts to place on a cutting board and shred with a fork.
