{"id":8001,"date":"2019-09-30T15:17:51","date_gmt":"2019-09-30T15:17:51","guid":{"rendered":"https:\/\/lindseyfishernc.com\/?p=8001"},"modified":"2019-09-30T15:17:51","modified_gmt":"2019-09-30T15:17:51","slug":"pumpkin-bites","status":"publish","type":"post","link":"http:\/\/odez.com\/lindsey\/pumpkin-bites\/","title":{"rendered":"Pumpkin Bites"},"content":{"rendered":"\n<p>All things pumpkin at this time of year, right?!  <br>Well, not for my daughter who doesn&#8217;t like pumpkin, but that just means more for the rest of us!!<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img decoding=\"async\" src=\"https:\/\/blog.fatfreevegan.com\/wp-content\/uploads\/2009\/11\/pumpkin-pie-bites-fb.jpg\" alt=\"Image result for pumpkin bites\"\/><\/figure>\n\n\n\n<p>Thank goodness I stumbled over this recipe from one of my favorites, <a href=\"https:\/\/foodbabe.com\/\">The Food Babe<\/a>, this weekend. I had some extra time to play in the kitchen and these looked delicious.<\/p>\n\n\n\n<p>I did alter the recipe slightly due to ingredients that I had on hand, but they turned out amazing and impossible to eat just one.<\/p>\n\n\n\n<p><strong><span style=\"text-decoration: underline;\">Food Babe&#8217;s Recipe<\/span><\/strong><br>Pumpkin Filling Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 cup pumpkin puree<\/li><li>\u00bd cup cashew butter<\/li><li>1 teaspoon vanilla extract<\/li><li>1 teaspoon cinnamon<\/li><li>\u00bc teaspoon ginger spice<\/li><li>\u215b teaspoon cloves<\/li><li>\u00bc cup coconut palm sugar<\/li><li>2 tablespoons maple syrup<\/li><\/ul>\n\n\n\n<p>Pie Crust Ingredients:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 cup unsweetened shredded coconut<\/li><li>1\u00bc cups pecans, crushed (extra for topping)<\/li><li>1 cup Medjool dates, pits removed<\/li><li>1 teaspoon vanilla extract<\/li><\/ul>\n\n\n\n<p>Instructions<\/p>\n\n\n\n<ol class=\"wp-block-list\"><li>In a food processor, blend all of the pumpkin pie filling ingredients until smooth.<\/li><li>Remove the smooth filling from the food processor and place in a bowl.<\/li><li>Go back to the food processor and blend all the pie crust ingredients (leave a few extra pecans on the side to use later for topping) until a dough-like consistency is achieved.<\/li><li>Use an 8&#215;8 baking dish and evenly press pie crust mixture into baking dish.<\/li><li>Scoop pumpkin pie filling on top of crust and evenly distribute the filling over the crust.<\/li><li>Top with extra pecans and place in the freezer overnight to serve chilled the next day. Enjoy!<\/li><\/ol>\n\n\n\n<p>Swaps that I made:<br> &#8211; sunflower seed butter for cashew butter<br> &#8211; no extra pecans on top<br> &#8211; only 1 T of coconut sugar<br><\/p>\n\n\n\n<p>I am telling you, these are a must-try!!
