{"id":8005,"date":"2019-10-08T16:11:31","date_gmt":"2019-10-08T16:11:31","guid":{"rendered":"https:\/\/lindseyfishernc.com\/?p=8005"},"modified":"2019-10-08T16:11:31","modified_gmt":"2019-10-08T16:11:31","slug":"pumpkin-chili","status":"publish","type":"post","link":"http:\/\/odez.com\/lindsey\/pumpkin-chili\/","title":{"rendered":"Pumpkin Chili"},"content":{"rendered":"\n<p><strong>1 pound organic ground beef<\/strong><br><strong>1 green pepper, diced<\/strong><br><strong>1 onion, diced<\/strong><br><strong>1 T chili powder<\/strong><br><strong>1 T cumin<\/strong><br><strong>1 tsp garlic powder<\/strong><br><strong>1 tsp onion powder<\/strong><br><strong>Salt &amp; pepper to taste<\/strong><br><strong>1-2 T olive oil<\/strong><br><strong>1 (15oz) can pumpkin pur<\/strong>ee<br><strong>1 (15oz) can pinto beans<\/strong><br><strong>1 (15oz) can black beans <\/strong><br><strong>1 (28oz) can tomatoes w\/ chilies (diced, not drained)<\/strong><br><br>Combine all seasonings in a small bowl and set aside.<br> In a large pot, saut\u00e9 onion, peppers &amp; ground beef. Add seasoning mixture and cook thoroughly\u00a0 (about 15 mins) Add pumpkin, beans and tomatoes. Cover and simmer about 15-20 mins.
