These are packed full of vitamins K and A, B2 and B6, vitamin C, calcium and potassium.<\/p>\n\n\n\n<p><strong>INGREDIENTS:<\/strong><br>1 large tomato, sliced<br>1\u00bd cups baby spinach<br>1 tbsp. pesto<br>\u00bd cup shredded cheddar<br>\u00bd cup shredded mozzarella<br>2 whole grain or corn tortillas<br>Seasonings: sea salt, pepper, cumin, red pepper flakes to taste<\/p>\n\n\n\n<p><strong>DIRECTIONS:<\/strong><br>\u2022Spread a layer of pesto over ONE tortilla <br>\u2022Add a layer of both cheeses<br>\u2022Add tomato slices and spinach and another layer of cheeses <br>\u2022Spray a pan and place over medium heat <br>\u2022Place the tortilla in the pan and put the 2<sup>nd<\/sup> tortilla on top <br>\u2022Cover and cook for about 4 minutes <br>\u2022Remove top and carefully flip the quesadilla, heating for another 4 minutes until the cheese has melted.  <\/p>\n\n\n\n<p><strong>TIPS:<\/strong> <br>If you choose tortillas that are WHOLE GRAIN \u2013 pick ones with the least amount of ingredients on the list. <br>If you choose <a href=\"https:\/\/www.mirancho.com\/products\/organic-corn\/\">corn<\/a>, they are smaller but a healthier option, as they are less processed. <br>Add organic black beans to your quesadilla for some added flavor, protein and fiber. <br>Serve with your favorite <a href=\"https:\/\/www.traderjoes.com\/digin\/post\/pepita-salsa\">salsa<\/a> and\/or guacamole.<\/p>\n\n\n\n<p> <\/p>\n","protected":false},"excerpt":{"rendered":"<p>Prepare for a delicious snack or meal.
