{"id":8187,"date":"2020-10-27T21:27:35","date_gmt":"2020-10-27T21:27:35","guid":{"rendered":"https:\/\/lindseyfishernc.com\/?p=8187"},"modified":"2020-10-27T21:27:35","modified_gmt":"2020-10-27T21:27:35","slug":"broccoli-chowder","status":"publish","type":"post","link":"http:\/\/odez.com\/lindsey\/broccoli-chowder\/","title":{"rendered":"Broccoli Chowder"},"content":{"rendered":"\n<p>1 medium onion, chopped<br>2 stalks celery, chopped<br>1 bell pepper, chopped<br>2 T butter<br>2 T olive oil<br>2 cloves garlic, minced<br>8 cups low sodium chicken stock<br>1\/2 tsp dried thyme\u00a0<br>1 bay leaf<br>1 teaspoon sea salt &amp; pepper<br>2 carrots, chopped<br>1 large potato, cut into small bite-sized cubes<br>4 cups broccoli florets<br>1 cup half-and-half OR full-fat coconut milk (for non-dairy option)<\/p>\n\n\n\n<p><span style=\"text-decoration: underline;\">DIRECTIONS:<\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>In a large pot, saut\u00e9 onion, garlic, celery, and bell pepper in butter and oil over moderately low heat until softened.<\/li><li>Add stock, seasonings, bay leaf, carrots, and potato and simmer, covered, for 15 minutes or until vegetables are just tender.<\/li><li>Transfer 2 cups of the solids with a slotted spoon to a blender, add half and half and puree OR use an immersion blender.<\/li><li>Return puree to the pot.<\/li><li>Add broccoli and simmer for 1 hour.
